Flourless Chocolate Cake – Gluten Free Bliss!

One amongst the many food blogs that I religiously follow belongs to David Lebovitz. Not only does he have awesome and simple recipes, he is also an amazing story teller, there is no way you can skip the story and go straight for the recipe. Once you start reading , you are hooked!

So I recently came across this cake he aptly calls a Chocolate Idiot Cake because of how simple it is to make. I attempted a slightly different version of it yesterday.

 

Ingredients
150 gm bittersweet chocolate, broken/chopped into smaller pieces
100 gm butter
3 eggs at room temperature
100 gm brown sugar
1 tsp vanilla essence

Method

  • Grease and dust (with cocoa powder) an 8′ springform pan
  • Melt the chocolate and butter together in a double boiler
  • In a bowl, whisk together the eggs and sugar, then whisk in the melted chocolate mixture until smooth.
  • Pour the batter into the prepared springform pan and bake for 20-25 min.
  • Cool and serve thin wedges of this very rich cake at room temperature

Note: I had a bit of a kitchen accident with the springform pan which was not fixed correctly, I lost a bit of batter in the process. Nevertheless, I baked this in a regular greased and dusted circular pan. The cake came out pretty clean upon inverting it onto a plate.

My Verdict
It’s a very dramatic cake because of how beautifully it rises due to the eggs. Because of all the chocolate and brown sugar (original recipe uses white sugar) , the color was a very rich dark brown.
Its a rich indulgent cake best had with ice cream.
